Boneless Chicken Thigh: 2 Alternative Recipes

I called it “2 alternative” because I am using 1 pack of boneless chicken thigh and turn them into 2 different dishes.

1. Sauted chicken in Xiaoshing wine (Chinese dish-wanna-be)

Serve: 4 – 6 people

Ingredients:

  • 4 pcs. of boneless chicken thigh (cut into 4 small pieces each).
  • 3 cloves of garlic (minced).
  • 2 cm of ginger (minced).
  • Mix sauce: 3 tablespoons of Chinese Xiaoshing wine + 1.5 tablespoons of soy sauce + 1 tablespoon of sugar + 1/2 teaspoon of black pepper.
  • 1 tablespoon of cooking oil.
  • For garnish: 2 scallions (chopped).

Steps:

  • In a medium skillet: pre-heat the cooking oil, put inside the garlic and ginger, and saute them for 1 minute.
  • Pour in the mix sauce, and saute for another 1 minute.
  • Put in the chicken. Saute for 10 minutes. Set aside.
  • Garnish with scallions.

2. Semur Ayam (chicken stew – Indonesian traditional dish)

Serve: 6 – 7 people

Ingredients:

  • 4 pcs. of boneless chicken thigh (cut into 4 small pieces each).
  • 4 medium potatoes (l).eeled and cut into 8 pieces each).
  • 1 pack of firm tofu (14 oz.).
  • 2 cloves of garlic (sliced).
  • 3 cloves of shallots (sliced).
  • 3 bay leaves (I prefer using daun salam).
  • 2 lime leaves.
  • Spices: 1 teaspoon of salt + 1/2 teaspoon of white pepper + 1/2 teaspoon of nutmeg.
  • 4 – 6 tablespoons of sweet soy sauce  (kecap manis).
  • 16 oz. chicken broth.
  • 2 tablespoon of cooking oil.

Steps:

  • In a large skillet: pre-heat the cooking oil, then saute the garlic, shallots, bay leaves, and lime leaves for 1 minute.
  • Pour in the chicken broth, then place the chicken thigh inside the skillet. Cook them for 5 – 7 minutes.
  • Pour in the potatoes and cook it together with the chicken for about 12 – 15 minutes (you may add 1 – 2 cups of chicken broth when needed).
  • Pour in the tofu, sprinkle them with the spices, and saute them for 2 – 3 minutes.
  • At last: pour in the kecap manis, mix and saute them for 1 – 2 minutes.  Turn off the heat.
